Conference to bring chefs, farmers, retailers together VARYSBURG — A farmer-chef conference called Field and Fork is scheduled Feb. 23 at Byrncliff Resort and Conference Center. The daylong conference, from 9 a. m. to 5:30 p. m., will offer Western New York’s chefs and other food-industry professionals the opportunity to network with food producers. Lunch will feature local products. The conference is an attempt to boost the market for locally grown foods by bringing farmers face to face with chefs and retailers. The goal is to build a local food system in the eight counties of Western New York. Keynote speaker is Eric Hahn, founder and president of Cherry Capital Foods, a local-food distribution company based in Traverse City, Mich., who will talk about his two-year-old business that began with the “one man with a van” idea and now includes a network of 150 farmers, processors and local producers who sell to more than 300 restaurants, schools, resorts, grocery stores and other food service establishments in Michigan. The conference, which costs $50, also will include workshops and a panel discussion.
